Macerated Champenoise style

Chic is our sparkling wine macerated in amphora that stays in its lees for at least 18 months. It is a blanc de blanc in which a part of the ripe grapes macerates for 8 days in amphora and the remainder is pressed directly to maintain better acidity. It ages in large wooden barrels for at least 6 months. No bentonite is added, nor is there any wine jelly for filtration. It re-ferments in the bottle with part of its must. The acidic tannic balance of the vintage grapes defines the cuvée.
