Champenoise style from oxidative wines

Sparkling wine made from local white grapes from vineyards at least 60 years old Bolla is our elegant idea of Metodo Classico. Wine made from a basic vintage harvest with the addition of 30% perpetual wines from 2014. The re-fermentation takes place in the bottle and is then degorged after at least 36 months on its own yeasts.
Unfiltered and non-stabilised.
